vegan, oil-free, nut-free, gluten-free, 3-ingredient miracle seedy crackers

short and sweet today! unlike the title.



other than water and salt, these crackers are 3-ingredient, thin, crispy, crunchy, and health-benefit packed.


i used these crackers as a side for the most delicious crockpot split-pea soup in the world... which i forgot to take pictures of. oops. next time!


these would be delicious with hummus or nut butter smeared on top. you can add or omit herbs as your heart desires.

INGREDIENTS-

  • 1 cup ground flaxseed

  • 2 Tbsp sunflower seeds, hulled

  • 1 Tbsp chia seeds

  • OPTIONAL 2 Tbsp pepitas (i used them because i like the flavor and texture)

  • 1/2 tsp salt

  • OPTIONAL 2 tsp dried herbs/spices (i used an italian blend but really use whatever you like-- even cinnamon and sugar would be good!)

  • 1/2 cup water



instructions:

  1. preheat oven to 350 degrees F. line a large baking sheet with parchment.

  2. combine all ingredients and let sit for five minutes.

  3. pour batter onto baking sheet. using your fingers (i recommend wetting your fingers for this), press out the dough until it is so thin that it practically rips beneath your fingers. this is slightly tedious, and might take around 10 minutes, but trust me, the results are soooo worth it. don't worry if the edges are ragged; it gives the crackers a "country charm."

  4. using a knife, cut the crackers into your desired shapes, but DO NOT separate them. bake them in one big rectangle.

  5. bake for about 35 minutes, checking every ten minutes to make sure they are not burning. depending on thickness of your crackers, yours might take longer or shorter to bake, so be wary and diligent! they are don when the center crackers are no longer soft in the middle. they will continue to crisp while cooling on the counter.

  6. allow to cool completely before breaking apart.
