vegan gooey brownies

do not be afraid, guys. i know this sounds like a stretch, but these brownies use SOY YOGURT as part of the base. i promise it doesn't leave a taste, it doesn't change the texture, and it doesn't make these brownies yucky in any way. there is absolutely zero difference in taste between these and any other brownie-- they are lightly sweet, decadent, and chocolatey, but also PACKED FULL OF NUTRIENTS!!! raw cacao powder is INCREDIBLY HEALTHY and makes these brownies entirely guilt-free as well as delicious. i made these brownies two hours ago and they are already finished-- my sister and i ate the entire batch. i'm not even kidding; they are gone. truly missed.
these brownies actually changed my life a little. i have only ever found vegan brownie recipes that use only peanut butter or almond butter or some sort of nut butter as a base-- which always imparts a flavor. that isn't a bad thing necessarily, and nuts and chocolate are a delicious combination, but i was really craving some pure dark chocolate flavor today and these DELIVER.
these brownies pack some protein, a good amount of fiber, and magnesium from the raw cacao powder. they are not overly sweet and that is just how i like my brownies but you can totally add more sweetener if you want. buuut if you like dark chocolate, these are for you.
without further ado, here they are!

INGREDIENTS (yields 12 small, bite-sized brownies)- dry:
1/3 cup raw cacao powder
2 Tbsp AP flour
1/2 tsp baking soda
pinch of salt
2 Tbsp dairy-free chocolate chips
1 Tbsp raw cane sugar for garnish on top
wet:
1/2 cup plain soy yogurt (i use silk brand)
1/4 cup almond butter
1 Tbsp + 1 tsp maple syrup
1 Tbsp olive oil
1 tsp apple cider vinegar
instructions:
preheat oven to 325 degrees F. line a small baking pan with parchment paper.
mix yogurt, almond butter, cacao powder, olive oil, and maple syrup in a microwave-safe bowl. heat in microwave for 30 seconds and stir again to combine, trying your best to squash all of the cacao powder clumps.
add flour, baking soda, salt, ACV; stir to combine. pour batter into the small baking pan. sprinkle the top with chocolate chips and sugar.
bake 20 minutes for gooey brownies (yum) or 25 for cakey brownies (also yum).
allow to cool for at least 20 minutes before cutting otherwise they will NOT be set.
